Hawes Wensleydale PGI – Neal’s Yard Dairy
Hawes Wensleydale PGI is a pale white cheese with a firm and slightly crumbly texture. Cloth matured Wensleydale is made to a traditional Yorkshire recipe in England in 5kg wheels & after maturation, has a buttery mouthfeel with a fresh acidity to finish. Also known as Wallace & Gromits favourite cheese.
A little history
Cheese has been made in the Wensleydale region of North Yorkshire, since the 12th Century, initially by Cistercian monks who settled there from southern France. Since that time, and up until World War II, most Wensleydale cheese was blue (and made with ewe’s milk), but the classic blue Wensleydale disappeared during the war. The 1990’s saw a revival of Wensleydale – thanks in part to increased consumer interest in the cheese due to Wallace and Gromit – and the production of modern white Wensleydale, which has become synonymous with Yorkshire. Wensleydale Creamery, located in the heart of the Yorkshire Dales National Park, is the only producer of genuine Yorkshire Wensleydale, which was granted PGI* status in 2013. It is also the only Wensleydale cheese that is actually produced in Wensleydale.
