CHARACTERISTICS

Shaw River Special Reserve is a hard cheese with a slightly crumbly texture & lemony and grass overtones, followed by a smooth richness from the buffalo milk.

In an amazing new cheese collaboration, wheels of  Shaw River Special Reserve made by the Haldane family on the farm at Yambuk near Port Fairy in South Western Victoria are then matured in the masterful hands of Jacks Holman. Jack matures the wheels of cheese at the ‘Crows Nest’ located at Rob Dolans winery in the Yarra Valley where they develop a gorgeous natural rind.

A little history about Shaw River Special Reserve

Farming pioneers the Haldanes were the first to import milking buffalo into Australia in the 1990s from Italy & Bulgaria. Shaw River created this cheese to celebrate their 21st year of production they have handed this cheese over to fellow cheesemaker Jack Holman to mature.

Jack Holman is better known for his role at the Yarra Valley Dairy, where he oversees the production of some of the most popular artisan cheeses in Australia. Stone & Crow is Jack’s side project, where he experiments with new cheeses such as Nightwalker & matures cheeses for other artisan cheese makers including Shaw River.
