Ortiz White Anchovies or Boquerones are small, fresh anchovy fillets that have been marinated in an escabeche of vinegar, olive oil, sliced garlic and chopped parsley. Not to be confused with anchovies cured in salt, these fillets have a firm texture and unique, delicate flavour.

Highly popular throughout Spain served on a slice of baguette as a tapas dish, they are also delicious spread on grilled bread with tomatoes and extra virgin olive oil. Traditional Pinxos dishes (tapas style from the Basque region) use Boquerones with green olives & guindillas.
