Giorgio Cravero matures his famous Parmigiano Reggiano at his property on the outskirts of Bra, Italy. A fifth generation affineur, the Cravero family have been selecting & maturing cheese since 1855. Try chunks of Parmigiano Reggiano & a smidgen of olive oil with your favourite aperitif. 200g
Shaw River Buffalo Cheese celebrated 21 years of cheese making this year & we have chosen their fresh handmade buffalo mozzarella to enjoy with your olive oil. Add tomatoes & fresh basil for a classic tricolor salad. 125g
Traditionally Spanish Manchego is rubbed with olive oil to encourage the rind formation. Ours is a raw milk farmhouse version selected by Will Studd. It is aged for between 6-9 months until the ivory-coloured interior develops a distinctive sweet moist nutty finish with just a hint of the grasses and wild shrubs that grow on the plains surrounding the farm. 200g
