La Courrone Fort Aged Comté – selected by Will Studd
La Courrone Fort Aged Comté is a very special Comte from Marcel Petite, one of the most respected Affineurs in France. This Comte Gruyere is selected by Will Studd to wear the prestigious red ‘crown’ of quality. He hand selects young wheels of cheese to be matured in the Fort of Saint-Antoine to reach their potential. Cheeses are selected for their quality & flavour, rather than simply on an age profile.
A little history about Marcel Petite
These hand selected wheels are aged under a cold maturation system at 1,100 metres in the 19th century underground Fort of Saint-Antoine high in the mountains of the French / Swiss border. These cheeses are made by small dairies in the Jura and are carefully graded before, during & after maturation. They have a rich concentrated nutty texture & a gentle caramel, sweet honey flavour reflecting the rich milk of the Montbéliard cattle that graze the natural mountain pastures.
Comte is an ancient type of Gruyere, similar to the large mountain cheeses made in the Alps, on the borders of France & Switzerland. Their name is derived from the forest known as gruyeres whose timber was once used to fuel the heat of the copper cauldrons of cheese curd. Comte now represents the largest volume of all the cheeses produced in the AOP system.
