Fromager des Clarines 250g – Jean Perrin

CHARACTERISTICS

Fromager des Clarins is a soft surface ripened, washed rind cheese made in the mountains of the Franche Comte region of France. The silky-smooth texture is attributed to a long curing process and the rich milk of the region, whilst the washing of the rind adds an aromatic flavour. As the cheese ripens, the smooth orange rind starts to ripple and bulge and the inside softens to a rich flowing texture that oozes from the centre of the cheese.

A little history about Fromager des Clarines

The Perrin family make cheese at their dairy high in the mountains of the Franche- Comte region of France to traditional French recipes. Historically this cheese would be made at the end of the season, during autumn and winter when the weather was colder. Instead of taking their milk to the local Comte co operative, smaller soft cheeses were made at home instead.

Whilst it can be enjoyed at room temperature with fresh crusty bread, Fromager des Clarines really comes into its own when baked in the oven – try piercing it with a few small garlic cloves, add a sprig of thyme and a splash of dry white wine, and bake in a hot oven for 15 minutes.
