Coolea – Neal’s Yard Dairy
Coolea is a hard cooked cheese made to a recipe similar to traditional Dutch Gouda, the main difference being that it is made with pasteurised milk. This aged version is only produced from cheeses made in the warmer months when the cows graze on pasture, not in winter when they are housed in sheds. The dense texture is smooth in the mouth, and the flavours are complex, ranging from rich and sweet, with hints of hazelnuts, butterscotch and honey, to nutty and lingering with a savoury finish.
A little history
Helen and Dick Willems moved to the remote hills of Coolea in Ireland in the 1970’s from the Netherlands. They started making cheese as a hobby due to the lack of locally available cheese and became one of the first new generation Irish cheesemakers. The cheese tasted so good that neighbours started wanting it and before long, Neal’s Yard Dairy in London. Intially, the family used the milk from their own few cows but now Dick Jnr runs the business with his wife Sinead & family, buying milk from two local farmers.
