Annie Baxter – Shaw River Buffalo Cheese
To celebrate 21 years of cheesemaking, selected wheels of Annie Baxter have been matured in the masterful hands of Stone & Crow in the Yarra Valley, where they have developed a gorgeous natural rind. The cheese inside has a slightly crumbly texture, with lemony and grass overtones, followed by a smooth richness from the buffalo milk.
The Haldane family were the first to bring milking riverine buffalo to Australia from Italy & Bulgaria in 1995 and have been making buffalo milk cheese ever since.
