That's Amore Scamorza Bianca is a fresh, semi-soft cows milk cheese belonging to the pasta filata family. It is pear-shaped due to a production method called 'strangling the cheese', where the fresh round cheese is hung to dry by means of a string tied a third of the way from the top. Scamorza is made in the same way as mozzarella but is a drier, firmer cheese. This cheese melts well because of its water content is lower than that of fresh mozzarella.
A little history
In 2004 Giorgio Linguanti arrived in Australia, in only four years this young Sicilian went from not speaking a word of English to opening his own cheese shop and winning an award at the Royal Melbourne Show. In 2016 the company approached the export market and is now supplying cheese to more than 10 countries. That's Amore produces a number of Italian style cheeses and has gone on to win numerous cheese awards.
