This hard buffalo milk cheese from the Haldene family farm on Gunditjmara country, Yambuk, south-western Victoria is matured by Stone & Crow's Jack Holman. Our next and last allocation of this cheese will be available mid April 2022.

Shaw River Special Reserve is a hard cheese with a slightly crumbly texture & lemony and grass overtones, followed by a smooth richness from the buffalo milk.

In an amazing new cheese collaboration, wheels of Shaw River Special Reserve made by the Haldane family on the farm on Gunditjmara country near Port Fairy in south-western Victoria are then matured in the masterful hands of Jacks Holman. Jack matures the wheels of cheese at the ‘Crows Nest’ located at Rob Dolans winery in the Yarra Valley where they develop a gorgeous natural rind.

A little history

Farming pioneers the Haldanes were the first to import milking buffalo into Australia in the 1990s from Italy & Bulgaria. Shaw River created this cheese to celebrate their 21st year of production they have handed this cheese over to fellow cheesemaker Jack Holman to mature.

Jack Holman is better known for his cheese making business Stone & Crow - one of Australia's newest cheese labels responsible for cheeses such as Nightwalker & matures cheeses for other artisan cheese makers including Shaw River.

Shaw River Special Reserve

First tried Shaw River cheeses from a little store in Yambuk which happens to be where the factory is. A hard buffalo milk cheese but still has a rich smoothness about it, similar to my top of the list favourite Manchego ewes milk cheese. Great with a Sav Blanc, Giesen or Oyster Bay and seafood. I'm not able to eat cows milk cheese, so it's great that some wonderful alternatives are available like Shaw River.

We're udderly delighted that you enjoy this cheese as much as we do. It's one of Victoria's great hard cheeses and with its esteemed pedigree (Shaw River production and Jack Holman maturation) we're not surprised. Thanks for the review, David.
