Shaw River Buffalo Mozzarella is made by hand on the Haldane's family run farm in Yambuck, south-west Victoria. The rich & creamy buffalo milk gives these traditional stretched curd cheeses their porcelain white colour, delicate texture and clean finish. The texture inside is juicy and moist between spun layers of curd. When just days old, the texture is slightly firm and slowly breaks down to softer texture when a week olds. Buffalo milk gives the cheese a richer, fuller flavour than cows milk, which is enhanced when combined with acidic flavours such as fresh tomato.

Shaw River Buffalo cheeses are made by hand on the Haldane’s family run farm in Yambuck, south-west Victoria. Pioneers of water buffalo milking, the Haldane family were the first to bring milking riverine buffalo to Australia from Italy and Bulgaria in 1995. They have continued to expand their dairy herd and use the protein rich milk of their grass fed buffalo to make a range of buffalo milk cheese and yoghurt.
