From a small cellar in Maimbray, central France, comes this sustainably produced Sancerre. Made with 100% Sauvignon blanc grapes from 20-year-old plus vines, that are hand-picked and sorted before being pressed, cool-fermented and matured in tank on fine lees for 6 months.
A little history about Pascal & Nicolas Reverdy
The Reverdy family have been viticulturists since the mid-1980s, establishing a strong reputation in part due to the care and attention paid to even the smallest detail of their vineyard. The farm is operated according to organic principles and grapes are all hand-harvested under strict selection guidelines.
The family name Reverdy is not uncommon in the region, though it is Pascal et Nicolas Reverdy who produce wines of this elevated level.
Both from central France, the pairing aligns with the old maxim – what grows together goes together. Rond la Tradition, a goats milk cheese from the Loire region has a soft texture with savoury & slightly earthy flavours. It pairs particularly well with P&N Reverdy Sancerre (100% Sauvignon blanc) with its bright fruit and chalky minerality.
