The parsnip is an often-overlooked root vegetable that has a rich sweetness which chef Ian brings to the fore with some gentle roasting. In Roman times, parsnips were thought to be an aphrodisiac but far be it for us to comment on such things.
This satisfying soup blends slow-roasted parsnips with real Cheddar cheese for complexity and depth. Perfect for wintery days!
