These line-caught and traditionally preserved anchovies produce beautiful plump fillets that have no bones as they are hand filleted. One they have fully matured, the anchovies are filleted one by one using a knife and packed carefully by hand in olive oil. Thanks to this meticulous preparation process, the anchovies have a compact texture and intense flavour.

Conservas Ortiz was founded more than 100 years ago and was established in a small fishing village, Ondarroa, located in the North of Spain, on the Cantabrian Coast on the Bay of Biscay. Conservas Ortiz preserve their artisan products respecting traditional fishing methods and the results can be seen in the unmistakable texture of their products and their natural flavour which set them apart from the rest.
