This soft, surface-ripened, washed-rind cows milk cheese from the Franche Comte region of France is the ideal cheese for baking.


Le Duc Vacherin is a soft surface-ripened, washed rind cheese specially made for Will Studd in the mountains of the Franche Comté region of France. Based on the famous Vacherin du Haut-Doubs except available all year and made from pasteurised milk, it is bound with a ring of traditional bark skillfully cut from the local spruce trees during the summer months. Chalky & mild when young, it is best enjoyed close to the use-by date when the smooth pinkish rind starts to ripple & bulge and the inside softens to a rich creamy melt in the mouth texture with just a hint of the forest.

A little history about Le Duc Vacherin

The Perrin family make cheese at their dairy high in the mountains of the Franche-Comte region of France to traditional French recipes. Historically this cheese would be made at the end of the season, during autumn and winter when the weather was colder. Instead of taking their milk to the local Comté cooperative, smaller soft cheeses were made at home instead. The spruce bark was introduced to prevent the cheese from cracking & collapsing as it matured.
