Pont l’Évêque (PAWN leh-VECK) is a washed rind cow’s milk cheese from Normandy, also the home of Camembert and Livarot. The dusty white rind has an orange/pink tinge which darkens as the cheese ripens. The ivory paste is firm with signature tiny holes. Allow the cheese to come to room temperature to appreciate its full, earthy aroma with hints of ‘cooked cauliflower’ similar to Camembert.  The rich, creamy flavour becomes more pungent as the cheese ages.

A little history

Dating back to the 12th Century, Pont l’Évêque is one of the oldest cheeses still in production in France. As with many washed rind cheeses, it is believed to have been developed by local Cistercian monks. Many monks did not eat meat and so cheese was a common source of protein. Conveniently, many monasteries were also produced alcohol (cider, beer, wine etc), thus the cheese produced was washed with said alcohol to add extra complexity as well as for preservation.
A forebear of Camembert, the cheese became very popular in the 16th Century and takes its name from a small village and bridge in Normandy where production was originally centred.
