December Cheese Subscription

Each month we choose a selection of cheeses with a common theme that is eating particularly well.

For December our wonderful staff here at Harper & Blohm Cheese Shop have selected their seasonal favourites – Epoisses, Stilton & very special Comte – with a twist.

If you want to choose a cheese, a Cheesemonger’s favourite its always a safe bet. We hope you enjoy them as much as we do!

MARCEL PETITE COMTÉ ‘SYMPHONIE’ AOP
Cow’s milk, Franche-Comté, France

Comte is ancient type of Gruyere, similar to the large mountain cheeses made in the Alps, on the borders of France & Switzerland. Marcel Petite, one of the most respected Affineurs in France, selects only a few wheels of Comte each year to bear the prestigious ‘Symphonie’ label. They have a rich concentrated nutty texture & a gentle caramel sweet honey flavour reflecting the rich milk of the Montbéliard cattle that graze the natural mountain pastures. Enjoy with charcuterie and a crisp white wine.

ÉPOISSES DU BOURGOGNE AOC Fromagerie Berthaut
Cow’s milk, Burgundy, France

Famous for its pungent aroma and sticky terracotta-coloured rind, Époisses has a smooth, velvety texture with a meaty flavour that melts in the mouth. During maturation, the cheese is washed in the local Marc de Bourgogne, mixed with salty water, several times per week. It tastes milder than the aroma suggests, and has a decidedly sweet finish.

COLSTON BASSETT STILTON PDO – Selected by Neal’s Yard Dairy
Cow’s milk, Yorkshire, England

Stilton is one of the world’s great blue cheeses, along with French Roquefort and Italian Gorgonzola. Colston Bassett Stilton has a rich, buttery texture with a minerally tang. It’s full bodied without being sharp or overpowering, and has a mellow, fruity, savoury complexity. Stilton was the first English cheese to be granted legal name protection under the PDO* system and is made by just six producers in the counties of Derbyshire, Nottinghamshire and Leicestershire. This particular Colston Bassett Stilton – developed in partnership with Neal’s Yard Dairy in London – is made using traditional animal rennet. This results in a cheese with a milder blue character but with a richer, more complex cheese flavour and a longer finish. Ideally matched with a slice of Christmas cake and a glass of port.
