This white mould goats milk cheese from the Loire region of France has a soft, fragile texture with savoury & slightly earthy flavours.

CHARACTERISTICS

Jacquin Rond la Tradition is made by master cheesemaker Monsieur Pierre Jacquin in the Cher valley region that lies south of the Loire Valley. In the traditional disc shape of the Loire region, this goats cheese is coated with salted ground charcoal before maturation to encourage rind formation. It develops a soft, fragile texture with savoury & slightly earthy flavours. The edible rind will become more wrinkled and peppery with age and when fully mature the cheese looks rustic with flecks of blue and white mould on the rind.

A little history about Rond la Tradition

Selles-sur-Cher style cheeses have been made in the Loire Valley since the 19th century. Originally this small format cheese was made by local goat farmers for their own consumption. Middlemen began collecting these rural cheeses and selling them in the village of Selle-sur- Cher, so over time the cheese took on the name of the town. As the name Selles-sur-Cher is protected by AOC* regulations, which stipulate that the cheese must be made from raw milk, this pasteurised milk version goes by the name of Rond la Tradition.
