This year at Harper & Blohm we are selling Christmas hams from Bundarra Berkshires - our supplier of beautiful Rillettes, Fricandeaux & cured meats. “Bundarra” is Lauren & Lachlan Mathers’ family free range Bio-dynamic farm on the Murray River just outside the small township of Barham in Southern NSW.
In contrast to "bred free-range" and "outdoor-reared" pigs, which are born in a free range environment but subsequently raised indoors, Bundarra raise their pigs in paddocks with housing that is available but not mandatory. The pigs' feed does not contain antibiotics or growth hormones, and the ham has no chemical nitrates or gluten. Each ham is naturally cured on the bone with local grapefruit juice & spices and then triple smoked over red gum from the surrounding forest. The flesh has lots of porky flavour, balanced with a good amount spice and saltiness. No nasties, gluten free and handmade with lots of love.
