This mild, creamy, mousse-textured cheese from the high plateau of Langres in Champagne-Ardenne is ripened under a sticky washed rind.

A small, concaved basin in the top known as the fontaine, sometimes filled with Marc de Champagne or Champagne before it is served.

The cheese gets its terracotta colour rind from the addition of annatto to the brine solution in which it is hand washed.

This cheese is named after renowned 18th century lawyer, politician, author & gastronome Jean Anthelme Brillat-Savarin. Having fled France during Napoleon I’s reign time he wrote The Physiology of Taste,a book which is still sold today.

Made from whole milk with added crème fraîche, Brillat-Savarin can be served at many different ages. When young the texture is dense, the rind is mild and the flavour is like thick crème fraîche. As it ages the rind blooms and becomes spicy, the texture is like a rich buttery mousse. A breakfast of Brillat-Savarin, dense fruit bread, strawberries and Champagne is the perfect indulgence.

Le Secret Des LysLe Secret Des Lys

Made near the village of Cleron high in the mountains of the Franche-Comte region by the Perrin family, this fragile, soft and creamy cheese is matured in a small ceramic dish.

This cheese has a silky texture, can be compared to St Marcellin in flavour.

The little terracotta pot that it comes in can be warmed if desired.

Coeur de Bray
Couer de Bray

Neufchatel is one of France's oldest cheeses, dating back as far as 1035! A legend tells that French farm girls fell in love with English soldiers during the Hundred Years War and started making heart shape cheeses to show their love.

Under the velvety rind is a soft, creamy and mushroomy-flavoured cheese.

These little hearts are only available in Australia for Valentines Day.
